ZUCCHINI HUMMUS

Whose looking for an easy, no-fuss hummus recipe that is keto/banting friendly? No additives, no colorants, no sugar, no carbs, no bad oils?

This recipe is exactly what you're looking for and besides being healthy, it is super delicious and very 'more-ish.'

The zucchinis can be raw or slightly cooked, however I like to cook them just a little as I prefer the taste of cooked zucchinis.

RECIPE

INGREDIENTS:

  • 2 medium zucchini, chopped
  • ¾ cup tahini
  • ¼ olive oil, plus extra for garnish
  • juice of 1 lemon
  • 2 cloves garlic
  • 1 tsp ground cumin
  • 1 tsp sea salt
  • chopped parsley for garnish

METHOD:

Place all ingredients in a blender with the zucchini chunks on the bottom. Blend until smooth.

Serve in a bowl, topped with chopped parsley, drizzled with olive oil and paprika.

Enjoy with sliced vegetables, salads, keto-friendly seed loaf (see my previous recipe).

Note: I use only cold-pressed, virgin olive oil as it is high in monounsaturated fatty acids, and when it is cold extracted, it ensures the retention of all the natural nutrients and antioxidants.
