It really IS this simple and it just makes sense!

This way of eating has grown in popularity, although there are many people who do not believe that LCHF is sustainable. This blog post is not about the science behind keto/banting; this is simply my first blog post about keto/banting, and I wanted to share my favourite bread recipe with you. Do try this really easy recipe, filled with the nutritious seeds and nuts. It will keep you feeling satisfied and tastes great too.
Banting Bread with Yogurt
INGREDIENTS:
- 2 cups almond flour (or Macadamia flour)
- 2 Tbsp chia seeds
- 3 Tbsp pumpkin seeds
- 2 Tbsp linseeds
- 1/3 cup raw pecans (or walnuts)
- ½ tsp xanthan gum
- 1 tsp baking powder + 1 tsp bicarbonate of soda
- ½ tsp pink Himalayan salt
- 170g full-fat Greek yoghurt
- 4 large free-range organic eggs
- 2 tsp sesame seeds to sprinkle
METHOD:
- Preheat the oven to 180C and line a bread tin with baking parchment or use a silicone bread mould.
- Add all the dry ingredients to a medium-sized mixing bowl.
- Whisk the eggs in a separate bowl and add to the dry ingredients along with the Greek yoghurt. Stir until fully combined.
- Spoon the bread mixture into the prepared baking tin. Bake in the oven for 1 hour.
Note:
- Pecan/walnuts are not essential, but make it a tasty.
- Chia seeds can be substituted with sunflower seeds.
- 1 cup flaxseed flour can replace 1 cup almond flour.
