A super easy Keto Banting bread with yoghurt and seeds

Are you looking for a super easy Keto Banting bread recipe that is really delicious? This is the ONLY one that I make and is the the ONLY one you will ever want.

So I'm on the Keto journey again, after giving in to my sugar and carb cravings. It has mostly been good, healthy food, but those little 'extras' soon become the norm and I found myself eating refined, sugary things and feeling lazy and just plain 'blah.'

Ingredients

  • 2 cups almond almond flour (or Macadamia flour)
  • 2 Tbsp cup chia seeds
  • 3 Tbsp pumpkin seeds
  • 2 Tbsp linseeds
  • 1/3 cup raw pecans (or walnuts)
  • 1/2 tsp xanthan gum
  • 1 tsp baking powder + 1 tsp bicarbonate of soda
  • 1/2 tsp pink Himalayan salt
  • 170g full-fat yoghurt
  • 4 large free-range organic eggs
  • 2 tsp sesame seeds to sprinkle

Method

1. Preheat the oven to 180 degrees Celsius and line a bread tine with baking parchment or use a silicone bread mold.

2. Add all the dry ingredients to a medium-sized mixing bowl.

3.Whisk the eggs in a separate bowl and add to the dry ingredients, along with the Greek yoghurt. Stir until fully combined.

4. Spoon the bread mixture into the prepared baking tin. Bake in the oven for 1 hour.

Deliciously moist

TIPS:

Add sunflower seeds for an extra nutty taste
Nuts can be omitted, but they do add flavour
Greek yoghurt can be replaced with plain yoghurt or milk
Slice once cool and place in freezer till needed

This bread is too good not to make 2 batches! If I don't want to bake 2 loaves at once, make 2 batches of the dry ingredients and freeze the second batch in a zip-lock bag.
